What’s the perfect thing to do over four weekends of Lockdown#2? Make a Christmas cake of course!!! We all learnt how to make sourdough and banana bread back in March, so lets get festive this time with a three part kit of ingredients with matching videos to take you step by step through making, ‘feeding’, marzipanning and icing your masterpiece. The perfect family challenge and all you have to add is the tin and a little extra booze from the back of your drinks cupboard to ‘feed’ the cake. By the way, it’s huge, so guaranteed to last well into February!

Course Information

This cake recipe has changed over the years with different elements from the best I’ve eaten. It has well and truly earnt it’s place in my ‘greatest hits’ recipe collection. Shoutouts due to my Mum Nina, my Nan Taylor, my friend Katy, Aj for persuading me to add apricots and pecans and Manuel for insisting I soak the fruit in Pedro Ximenez! You won’t find a better recipe anywhere else – can’t believe I’m sharing it to be honest – lockdown must have finally got to me!!

What you need;

A 10″ cake tin with removable bottom preferably

Old newspaper, one that’s not worth reading!


A little vegetable oil for greasing your tin

A little brandy, whisky, spiced rum or sweet sherry to feed yourself… I mean the cake! (You don’t need all of them, just one is perfect)

A reliable oven

Rolling pin

A bit of spare time though lockdown
