Course Information
What’s the class about?
Here in Cornwall we are blessed with some of the best seafood in the world. However, many of us don’t feel confident cooking it!
In this hands on class, you will learn how to prepare and cook a variety of seafood so you can go home with a wealth of new skills and be able to prepare this wonderful source of food at home.
What will you cook?
We try to offer as much variety in the class as possible whilst taking sustainability into account. As such, all our fish is sourced responsibly and will vary throughout the year. Examples of dishes cooked are:
- Pan-fried scallops with brown butter, vermouth and orange
- Thai style squid salad
- Grilled mackerel crostini with salsa verde, aioli and quick pickled cucumber
- Pan fried cod with sauce vierge, heritage tomatoes fresh herbs
Time: 10.00am – 2.00pm
What is the format of the class?
You’ll enjoy a hot drink and pastry upon arrival and get to know your fellow classmates.
This class is a ‘cookalong’ format where you intermittently watch demonstrations as each seafood is prepared and cooked before cooking each element yourself. This format ensures you see each skill directly before attempting it yourself.
You will graze on the dishes cooked as the class develops. Some elements will be cooked in pairs, others individually. A glass of wine will be served towards the end of the class (when less skill is required!).
